In Colombia seafood Ceviche is a very typical dish. One of my favourite ones. For those who are not fans of raw fish or seafood, maybe allergies, this is a great vegan option. If you are in Asia, longan is a great option other than lychee. Which by the way children love for their sweetness. I came across this recipe as I was planning a raw food workshop in Hanoi.
This is my daughter Gaia eating longan in Hanoi. The taste is very similar to the one of Lychee but sweeter, and the texture is smoother. To me, it was like popcorn, I could not stop eating them!
PREP: 20 MINS – YIELD: 6 SERVINGS
INGREDIENTS
- 1 cup of Lychee (you can also replace with longan)
- 1 Avocado (diced)
- 1 teaspoon lime juice
- 1 teaspoon coriander (chopped)
- 1 teaspoon minced chives or green onions
- 1 teaspoon of fresh mint (chopped)
- ¼ cup cucumber, diced small
- ½ teaspoon ginger (grated)
- 1 tablespoon red onion, diced small
- 2 pinches salt
preparation
Mix all ingredients in a bowl. Serve over corn chips or inside corn tortillas to make ceviche tacos. Enjoy!
